Homemade Sourdough Bread 🍞

If you've been wanting to try making sourdough bread at home, this is your sign to give it a go! With just a few simple ingredients and a little patience, you'll have the most delicious, tangy, and crunchy bread fresh out of your oven.

😍 Here’s how to make it:

Ingredients:

¼ cup (50 g) active sourdough starter (100% hydration)

1 ⅓ cups + 2 tablespoons (350 g) water

2 teaspoons (10 g) fine sea salt

4 cups + 2 tablespoons (500 g) bread flour

Instructions:

Mix the Dough:
In a large bowl, combine 500 g of bread flour and 350 g of water. Stir until just combined and let it rest for 30 minutes (autolyse).

Add Starter & Salt:
Add 50 g of sourdough starter and 10 g of salt. Mix everything together until fully incorporated. The dough will be sticky at first.

Knead the Dough:
Turn the dough onto a lightly floured surface and knead for about 8-10 minutes, or use the stretch-and-fold method for 5-6 minutes.

Bulk Fermentation:
Place the dough in a clean bowl, cover, and let it rise at room temperature for 4-6 hours. Do stretch-and-folds every 30 minutes for the first 2 hours.

Shape the Dough:
Once doubled in size, gently shape the dough into a round or oval loaf.

Proof the Dough:
Let the dough rest for 1-2 hours at room temperature or refrigerate for up to 12-14 hours for more flavor.

Preheat the Oven:
Preheat your oven to 475°F (245°C) about 30-45 minutes before baking.

Score & Bake:
Score the dough, place it in a preheated Dutch oven, and bake for 20 minutes covered, then 25-30 minutes uncovered until golden and hollow when tapped.

Cool & Enjoy:
Let the bread cool for at least an hour before slicing and enjoy the crispy, tangy goodness!

Boost your sourdough game by grabbing our dehydrated #sourdoustarter!

Add this pack to your fave sourdough starter vessel with a couple TBS of water and let it soak up all that moisture until you can stir it into a paste.

Add 15 g of flour and enough water to make a thick pancake batter consistency. Do this daily increasing the flour and water slightly. Basically you want equal parts flour to starter and just enough water to create a thick batter.

After day three there should be some activity/bubbles forming. Discard half your mixture and re feed equal parts flour:starter and a bit of water. Your starter should be starting to double! The more you feed the stronger it will get!

Discard so you don't need to feed as much...you can add discard to many recipes like pancakes or crackers! After about a week once it forms a better flavor you can use your discard in recipes like pancakes and crackers!

This is a GUIDE, and meant to help get your starter going, things like humidity and temperature and elevation matter with sourdough and sourdough starters and every environment is a little bit different so make sure to find a nice warm spot to get going!

Go in for a SECOND score 5 minutes after starting your bake. Scoring only the main score. Not the pretty designs you maybe made just the main steam escape score!

If you have a super over proofed loaf and you are worried it will deflate the minute you cut into it then WAIT 🛑 don't score at all...just pop that loaf directly into the oven and score it after 5 minutes.

When we traditionally & slowly stone mill our flour soooooo much more of the flavor, nutrients and grain are kept intact.

Each grain offers a different aroma and taste, and can be used in so many different ways adding beautiful FLAVOR to any bake. Whole grain flour not only adds a ton of vitamins and minerals to your diet but also fiber which is so important for gut health. So many people, me included, are intolerant to white industrialized enriched flour these days. Bloated, gut issues, fog and so many other problems but when we eat whole grain, fresh stone ground flour the aftermath is quite opposite! We hear from customers all the time that when they bake using our products they feel great, that our flour isn't inflaming their system, that their bakes make them feel full and satisfied LONGER.

When you see a dark brownish alarming liquid on top of your sourdough starter...

This is called HOOCH and It's totally FINE-just means your starter is hungry!! So feed her! I love a 1:1 ratio flour and starter with just a bit of water to create a thick batter. If you have your starter out on the counter for daily use I suggest storing in a cool spot so she doesn't eat too quickly and you aren't having to feed her more than once a day. Temperature is super important when dealing with sourdough in general. Cool temps slow things down where warmer temps speed everything up.

Rehydrate our sourdough starter with me...

1. Add your dehydrated starter to a jar and add just enough water to cover. Leave this on the counter for a couple hours or until the flakes have absorbed enough water to mix together.

2. Add 2 TBS of flour and stir until fully incorporated. Add just enough water to form a thick pancake batter consistency and let this sit on the counter over night

3. The next day feed another 2 TBS of flour and enough water to form a thick pancake batter consistency.

4. Repeat step three one or two more times daily. TIP. if a liquid forms on the top of your starter DO NOT PANIC...this just means your starter is working and it's hungry again so feed another two tablespoons flour and add a dash of water this might be the second feed of the day and that's totally fine!!!

5. After a few feedings your starter should be bubbling and doubling. Once this happens discard half your starter and feed once more equal parts starter:flour with just enough water to form a thick pancake batter!

6. Once it doubles again you can use it in all your fave sourdough recipes!

This took a total of three days. I fed twice on day 2 and by the end of the day it had doubled, on day 3 I fed equal parts flour:starter and was able to bake with it that same afternoon.

Quick Rise Pizza Dough - Simple, delicious and made using our bread flour 🌾 🌾 perfect on those nights you just need something easy to make for dinner that everyone will LOVE

🍕 This recipe will make 2 LARGE pizzas! 🍕

Ingredients:

2 cups + 2 tbs warm water (110 degrees F/45 degrees C)

2 (.50 ounce) package active dry yeast

2 teaspoon white sugar

5 cups bread flour

4 tablespoons olive oil

2 teaspoon salt

Method:

Step 1: Grab all your ingredients. Preheat oven to 450 degrees F (230 degrees C), and lightly grease a pizza pan.

Step 2: Place warm water in a bowl; add yeast and sugar. Mix and let stand until creamy, about 10 minutes.

Step 3: Add flour, oil, and salt to the yeast mixture; beat until smooth. You can do this by hand or use a stand mixer fitted with a dough hook to make it easier. At this point you can add a bit more water if needed.

Step 4: Let rest for 5 minutes

Step 5: Turn dough out onto a lightly floured surface and pat or roll into two 12-inch circles

Step 6: Transfer to the prepared pizza pan.

Step 7: Spread crust with sauce and toppings

Step 8 : bake until the crust is golden - approx 15 minutes. Cool 15 minutes and enjoy!!

The day has finally arrived. Our stone mills have been turned on and test milling has begun!

We have been milling using a stone burr mill but I knew immediately we needed these slower traditional stone mills. Why? Well there are so many reasons but to name the top few...

🌾 The process is slower making it easier to maintain an appropriate temperature which is paramount in creating the most nutrient dense product we can possibly make!

🌾 Slowly stone milling preserves so much flavor in the flour.

I literally have to pinch myself sometimes because this feels like a dream. A dream to get to live on such a beautiful island and even more so being able to mill for humans who KNOW and appreciate so much what we are doing.

The active enzymes available in fresh milled flour are unbeatable and the flavor is pure perfection, because each grain produces a different taste. With the exception of our bread flour and general purpose, our products are whole grain. This is the most important part. The products we do sift are to an 80% extraction rate meaning 80% if the whole grain is left intact within the flour.

Our bread flour not old tastes delicious, the bran portion of our bread flour is maintained to approximately an 80% extraction rate! Meaning we only remove about 20% of the bran. Below are some some more fun facts about our bread flour.

🌾 Emmer is a foundational ancient grain and is the second oldest of the four ancestral wheats (Einkorn, Emmer, Spelt and Khorasan/Kamut). It has been grown for millennia in the middle east, North Africa and Italy where it is known as ‘Farro Vero’ or True Farro. Emmer ultimately gave rise to durum wheat and Khorasan, which it predates by more than 4,000 years.

Emmer makes wonderful pasta and is considered superior by many Italian pasta makers. 🍝

Bran Muffins 🤎

This simple muffin recipe will adds a ton of yummy fiber to your diet. Feel free to mix and match add-ins like berries, bananas, raisins, nuts, seeds, coconut, carrot and this list goes on....

INGREDIENTS:

1 ½ cups wheat bran

1 cup buttermilk

⅔ cup brown sugar

⅓ cup vegetable oil

1 egg

½ teaspoon vanilla extract

1 cup SS WHOLE GRAIN FLOUR

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

½ cup raisins or other add ins

DIRECTIONS:

Gather all ingredients.

Preheat the oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.

Mix wheat bran and buttermilk together in a large bowl; let stand for 10 minutes.

Meanwhile, beat brown sugar, oil, egg, and vanilla together in a separate bowl until light and fluffy; stir into buttermilk mixture.

Sift flour, baking soda, baking powder, and salt together; stir into buttermilk mixture until just blended. Fold in raisins/add-ins; spoon batter into the prepared muffin cups, filling each 2/3 full.

Bake in the preheated oven until tops spring back when lightly pressed, about 15 to 20 minutes. Cool in the tin briefly, then transfer to a wire rack to cool completely. Enjoy!

NOTE***if you don't have butter milk, just add a tbs of vinegar to a cup of milk and let that sit for a few mins before adding.

Level up your burger game with these quick, easy one hour or less homemade hamburger buns! This recipe makes 8 buns and is guaranteed to add amazing flavor to this summer time bbq staple!

Ingredients
1 Cup + 2 tbs of warm water
2 tbs active dry yeast
1/4 cup honey
1/3 cup cooking oil (I use avocado oil)
1 egg
3 1/2 cups of our General Purpose Flour

Method

1. Add the water yeast and honey to a mixing bowl, let stand for 15 minutes
2. Add all other ingredients and knead by hand or in a stand mixer for 15 minutes or until the dough passes the window pane test.
3. Divide dough into 8 equal pieces and shape into flat bun sized pancakes.
4. Let the shaped buns rest 15 minutes
5. Preheat your oven to 425° and bake buns for 10 minutes or until golden.
6. ENJOY!

This is a great process (not recipe) to start on a Friday eve, so you have fresh bread all weekend long. I make a few extra too so that I can pop one or two into the freezer to last the week. I use this across the board with plain ol sourdough, artisan breads, bagels...all the things!

Mix your dough at night before bed 💤

🌾 Mix it up without salt and let that sit for an hour. Add your salt by sprinkling it on top and then, with wet hands, poking it into the dough with your fingers and then doing a nice lamination bringing it back into a nice ball to sit for approx 45 ish mins. Time for one more lamination/ball and left to sit over night in a cooler spot, covered with a wet towel.

🌾 Shape in the am rest for an hour or two (speed up the process by placing in your oven with the light on) dough should be slightly less then doubled. Preheat your oven to 375 degrees and bake for 45 ish mins or till it's reached a desired golden color. 🍞
